Goldrush apples are a cross of golden delicious and an experimental variety of apple (Co-op 17). That Apple is developed by the disease-resistant apple breeding program of the University of Illinois, Purdue University and Rutgers University in New Jersey. Illinois State Fruit Goldrush apples are long-keeping and have a delicious sweet-tart taste. The Apple Name “Goldrush” refers to the golden color and the “rush” refers to rich, spicy flavor. The State Fruit Of Illinois apples themselves are relatively large (6-7 cm. in diameter), firm, and crisp. The fruit is green to yellow with an occasional red blush at the time of picking, but it deepens to a pleasant gold in storage. In fact, Illinois State Fruit Goldrush apples are excellent for winter storage. They appear very late in the growing season and can hold up easily for three and up to seven months after being harvested. The skin of a goldrush apple is greenish-yellow with occasional bronze to red blush at harvest (which turns to solid deep yellow in storage). Illinois State Fruit is one of the latest harvesting apples, so may not ripen properly in many northern areas. However, letting it hang as long as possible and storing for a while before eating will allow it to mellow. State Fruit Of Illinois is very firm, crisp and juicy. Tart at harvest it will develop a very rich, well-balanced flavor after a few weeks of storage. It stores very well. The variety is derived from Golden Delicious as the seed parent, with crosses from several other research varieties including Winesap, Melrose, Rome Beauty, and Malus floribunda – the latter being a well-known source of the Vf scab-resistant gene.
